What to do when a person with Moon square Pluto is being so nosey?

It depends on how important they are to you. Either overlook it and accept it or Blow her out of the Water and probably never see her again. I actually had a friend like that. She drove me nuts when she backed off after pulling something like that because I always fell for it and thought she wanted to be my friend. If given the chance now, I would blow her out of the Water because nothing good can come from a "relationship" like that
